This blondies recipe is lightly sweetened, fudgy, and buttery, with flavors of vanilla and cinnamon. Use other flours or gluten-free flour blend of choice. If you are using a whole grain flour to replace the white flour in this recipe, add 1 to 2 tablespoons less than the mentioned quantity, and add more only if the mixture is too wet.
Not only are almond butter blondies delicious and easy to make, the batter is free from added refined oil! If you want to make them completely oil-free, use cacao nibs in place of the chocolate chips.
They're also refined sugar-free, since we sweeten these blondies with coconut sugar, which gives them such a nice flavor.

[feast_advanced_jump_to]This is a hearty mutton (meat) recipe that I've adapted from Pahadi cuisine and converted to a vegan curry. Pahadi means mountains, and the mountainous regions in India have their own cuisine. There are many states in the region and this mountain cuisine varies based on the state and city cuisines.
Many of the recipes from the cuisine use lots of whole spices in the sauce. Like all of my other vegan Indian recipes, even you don't have all of the whole spices, you can still make the recipe. It will still have enough flavor overall, but you definitely should try it with the listed spices at least once.
I often also use these spices, like the Kashmiri chili powder and black cardamom, in other recipes, so if you get a bag, you're going to keep using them.
Get them from the Indian store, because you can get a smaller quantity for much cheaper than online. You can also order from Indian stores online, because they often deliver, as well.
You can bake or pan-fry the tofu for this recipe. I'm pan frying in the video, but the recipe includes baking instructions, as well. Great texture, just perfect comfort food! Unlike zucchini lasagna bake that needs a lot of steps, and can still give you limpy or watery result, these rolls bake up perfectly, are versatile and also easy to serve!
This is a really beautiful dish which you can serve at parties or for a fancy dinner. It's also relatively easy to make. The only time consuming part is rolling up the zucchini slices. But unlike pasta, there's no pre-cooking to do. Just use a peeler to slice your zucchini into long, skinny pieces.
You can use pre-cooked lasagna sheets in this as well, if you don't want to use zucchini.
The vegan ricotta-style filling is also easy to make. It has amazing flavor with the herbs and sun dried tomato. Just add everything to a bowl, and mix and mash to make the filling. It comes together super quickly!
Spread that creamy filling into the zucchini, and roll it up. It doesn't even have to be perfectly spread out. Roll the zucchini up, and place into a baking dish with some pasta sauce, then top it with vegan cheese and bake. I add some veggie grounds(vegan ground meat substitute) to the pasta sauce and it all bakes at the same time to make this meaty ragu. Use lentils or just omit for variation.
These zucchini lasagna rolls come out so pretty, and they're fun to serve and eat.

Thecha dal, an Indian red lentil dal that you know and love with a spicy, nutty, umami-packed addition! Blistered chilies garlic are pounded with peanuts to make a chili chutney, and swirled to the lentil soup to make a flavorful dal!

This green chili chutney from the Indian state of Maharashtra is the preferred side with flatbreads like Bhakri( millet or sorghum flatbread). It is a spicy, nutty mix of green chilies, garlic, and peanuts, lightly blistered and then ground up with a mortar and pestle into a coarse mixture.
We make the Thecha chutney from scratch. It is a delicious spicy garlic chili chutney! You can also serve it as a side, like a chutney, or add to sandwiches or to your Indian spread.
In this Lentil dal, Thecha, the roasted green chili, garlic, peanut condiment gets swirled into this dal for a complex flavor and comforting meal!
Use whichever lentils of choice and make double protein of Thecha to use later in sandwiches or on garlic bread!
